You can either make your own individual cheese cakes or purchase small individual size cakes from the market like we did! These were 3-inch mini cheesecakes.
– 2 cups Gummy Berry Grapes
– 2 tbsp sugar
– 2 tbsp honey
– 2 tsp fresh lemon juice
– Fresh mint for garnish
– 2 tbsp water
- Place grapes in a large saucepan or skillet and place on medium heat and add sugar, water, honey and lemon juice and cook for 10-15 minutes until the mixture has reduced and liquid sticks to the back of a spoon.
- Remove from heat and place in plastic bowl and refrigerate or freeze just to cool down mixture about 5-10 minutes.
- Spoon mixture over cheese tart and serve with a garnish of fresh mint.
