Roasted Tomato Caprese Skewers

  • 8 oz Magnifico Organic Grape Tomatoes
  • 2 tbsp olive oil
  • 2 tbsp Balsamic vinegar
  • 1 lb baby mozzarella balls
  • salt and pepper to taste
  • 10 fresh basil leaves
  • 10-12 bamboo skewers 4-6″


  1. Preheat oven to 400.
  2. In an oven safe dish with sides, place tomatoes in pan and drizzle olive oil over them and place in oven for 8-10 minutes then remove from oven and allow to cool for 10 minutes.
  3. Alternate tomato and mozzarella on skewers using two tomatoes and 2 mozzarella balls per skewer.
  4. Place on serving plate and drizzle balsamic vinegar and julienne basil and sprinkle over top.
  5. Salt and pepper to taste.
