Magnificos with White Beans and Fresh Herbs

  • Magnificos and Fresh Herbs:
  • 3 Cups Magnifico Tomatoes, quartered
  • 2 Tablespoons Fresh Basil, minced
  • 1 Tablespoon Fresh Oregano, minced
  • 2 Tablespoons Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Smoked Paprika
  • 2 Tablespoons Agave Nectar or Sweetener of Choice
  • 1 Tablespoon Balsamic Vinegar
  • Fresh Cracked Pepper

White Beans: 

  • 2 Cups Cooked White Beans
  • 1/2 Cup Celery, diced
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Red Onion, minced
  • 2 Tablespoons Fresh Italian Parsley, minced
  • 1/4 teaspoon Salt


  • 12 Butter Lettuce Leaves, stem ends trimmed clean



  1. Whisk together Sweetener, Balsamic Vinegar, Salt, Pepper, Seasonings and Oil in a Mixing Bowl.
  2. Toss Magnifico Tomatoes and Fresh Herbs in the Vinaigrette.
  3. Mash Beans, Celery, Garlic, Onion, Parsley and Salt in another Bowl.
  4. Fill each Lettuce Leaf with a big scoop of mashed Bean Mixture.
  5. Top with 2-3 Tablespoons Magnifico Tomatoes and Fresh Herbs.


Serve filled Lettuce Cups on a Family Platter or on Individual Plates.
